                Healthy Green Soup topped with Avocados or Peas

We are sharing today our go-to wholesome and nutritious organic green soup. This recipe is quick, easy and healthy. It is filled with hearty and fiber-rich vegetables that will leave you feeling full! If you are trying to shed some pounds this green soup is the perfection option for your diet.



  • 1 tablespoon plus 1 teaspoon coconut oil
  • 3 leeks, chopped
  • 1/2 teaspoon salt, divided, plus more to taste
  • 4 cups water, divided
  • 1 teaspoon of cumin
  • 4 cups vegetable broth, store-bought or homemade or 3 cubes of organic vegetable broth
  • 1/2 cup of brocoli
  • 1/2 cup of cauliflower
  • 1 large sweet potato
  • 4 celery sticks
  • 2 cups of chopped kale (a little less than a pound), any though stems trimmed
  • 2 cups gently packed spinach (about 1 1/4 pounds), any tough stems trimmed
  • Pinch of cayenne pepper
Condiments :

  • 1 cup fresh peas and cream


  • 1/4 of fresh avocado



  • Heat oil in a large skillet over high heat. Add leeks and 1/4 teaspoon salt; cook, frequently stirring, until the leeks begin to soften, about 5 minutes. Reduce the heat to low, add water until all the leeks are covered, add cumin and cover. Cook, frequently stirring, always covering the pan, until the leeks are significantly reduced and have a deep caramel color, about 20 minutes.

  • Then combine the leeks, the cubes of organic vegetable broth and the remaining 3 cups water and 1/4 teaspoon of salt in a large soup pot and add sweet potato, broccoli, celery, and cauliflower. Bring to a boil. Reduce heat to maintain a simmer and cook until very soft, 12 to 15 minutes.

  • Stir in spinach, kale, cayenne; cover and cook, stirring once, until the spinach and kale is tender but still bright green, about 5 minutes.

  • Remove from the heat, puree the soup in the pot with an immersion blender until perfectly smooth or in a regular blender in batches (return it to the pot). Taste and add more salt and/or pepper, if desired. Serve garnished with cooked fresh peas or sliced avocado, a large soup crouton, and crumbled goat cheese or/cream, if desired.


Make Ahead Tip: Cover and refrigerate for up to 3 days.
