Kale Salad
Kale and romaine salad with sweet potato

Our organic Kale, red cabbage and sweet potatoes salad topped with Chia Seeds will leave you full the entire day. This healthy recipe is easy to make, nutritious and low calorie dinner option!

— INGREDIENTS —

  • 1 Sweet Potato, peel and chopped into small cubes (approximately 1inch)
  • 1 tablespoon cilantro, chopped
  • 1/2 cup of cherry tomatoes chopped in half
  • 1/4 cup of chopped red cabbage 
  • Half of an avocado
  • 1 teaspoon of chia seeds
November Living's favourite Dressing:
  • 2 tablespoons ponzu
  • 3 Tablespoon of sesame oil
  • 1 teaspoon of Dijon Mustard
  • Salt and Pepper to taste

 

— Preparation —

  1. In a sauce pan boil about 1 cup of water and put the chopped sweet potatoes. Cook until tender
  2. Wash lettuce and vegetables
  3. Cut
  4. Use a chef's knife to remove the tough ribs from the kale, then discard them. Chop the kale leaves into small, bite-sized pieces and transfer them to a mixing bowl. Sprinkle the kale with a dash of sea salt and use your hands to massage the kale by scrunching up the leaves in your hands and releasing until the kale is a darker green and fragrant. Toss the remaining salad ingredients with the kale.
  5. To make the vinaigrette, whisk together all the ingredients until emulsified. Toss the dressing with the salad and serve. Top the salad with the chia seeds
